1 C. plain low-fat yogurt

1 C. diced peel, seeded, peeled seeded cucumber

1 Tbs. chopped fresh mint or parsley

1 teaspoon minced garlic

1/2 tsp. salt

Directions

The outdoor grill or broiler to hot. Keep small mushrooms intact; cut larger ones in half. In a large bowl place shrimp, mushrooms, the red onion and zucchini. Mix olive oil, lemon juice and garlic in the bowl of a small. Add black pepper, salt oregano and salt to your vegetables. Toss until evenly coated. Place the shrimp and veggies on grill racks or a broiler pan. Grill or broil not more than 6 inches from the heat until shrimp and vegetables are just cooked, about 8 minutes, stirring often and brushing them with the remaining marinade.
